About ratio I’m leaning toward 3.73-4.10 something I believe also looking for a good lock and haven’t quite decided between auburn and Detroit locker.
I usually travel short distance, but some(very few)meetings could be up to 450km away. I’ll try and speak to the mechanic about offsetting and porting, otherwise I know I’ve spoken to John Rosello a while back. Maybe could have a talk about heads with him again.

Your European 98 octane (RON) is roughly equivalent to US 93 octane (MON) so probably 9.5:1 is a good compression target, maybe a little more. If you want to run E85, you can add more compression and make more power, but have to make sure that everything the fuel touches is compatible, will also use around 30% more.
If you are going to add boost, then you might not want to go bumping up compression. I’ve got a small block Mopar build in the works and was going to bump the compression up, but looking at the cost of new pistons and maybe also rods to make this work does raise the question of maybe leave the compression alone and add a Chinese eBay turbo instead, might be the cheaper option.

The E85 vs gasoline are really different builds also.
E85 has less BTU by volume then gasoline and has 27% less energy per gallon. The volume of E85 to produce more power in the same CID is much higher, though you can run higher compression due to the less energy, higher octane and cooler burn temperature. Agree with WesternRed, pick your fuel and build around that. That 397 stroker build was just about perfect for getting every BTU into useful HP for SCR and displacement/stroke of the motor on paper. Built differently using gasoline with different SCR... , more HP could have been made, but that was not the plan.
