Are stock style master cylinders for early to mid 70s AMCs available in aluminum?

A quick scan of the Rock Auto parts catalogue shows no aluminum master cylinders, so would have to say no.
Not the all and be all method as there may have been exceptions.
One being the Eagle Talon that does have an aluminum master cylinder but is not shown in the catalogue.

Jeeps used them.  I've forgotten which years, but I believe it's the mid 80's CJ's that had them.   None of the cars had them to my knowledge.

Pretty sure ‘80’s Cherokee’s have them too.

Any front disk/rear drum master cylinder should do for a rear disk brake conversion.
Rear disks are much smaller piston diameter and don't take much more volume to operate then rear drum brakes.
You will likely need an adjustable proportioning valve to reduce the pressure to the new rear disks also so the rear does not lock up before the front. Changing master cylinders will do nothing to prevent this.
