The reason why I wanna switch carbs is easy to see in the picture below!

And the valve adjustment went well! It was pleasant to do and I didn't brake my hand! I stalled the engine while zero-ing the distance between rocker and stem with the feeler gage at the very last intake valve, after adjusting it to a looser gap, it wouldn't stall.

Good lord. It never ceases to amaze me what those "shade tree mechanics" aka hacks will do to a machine. My whole car had been "restored" by one of those types of people. What a mess.

lol that's a larf! Sorry for you though, sheesh. OK if you need to make it go and you're missing choke parts? OK, just wire it open or something. HACKSAW THE TOP OFF. Never thought of that. Thankfully.
