Off topic, but that's a great chart Scrappy!
With the temperature spike also comes the pressure spike. This is why you will most likely find a coolant leak after shutting down the engine. Especially if you have a bad radiator cap!

Yes because the coolant is still absorbing heat from the iron block and heads - but has no way to get rid of it. 
My brother had that issue with his 69 - it would dribble out the overflow after it was shut off but otherwise was fine (well, it ran warm) 
New cap solved the "leak".

It's in line with the preceding commentary about post-shutdown effects on the fuel system components in the engine compartment.  While I did mention all the locations I took data from, the chart only shows the temperature at the base of the carburetor, which is on-topic.
