CA is definitely not a dead zone for auto machine shops compared to most states. If you're not looking for a stock appearance, sell the heads to someone that is and go Edelbrock. They're a 1 year part and have value for someone wanting a stock restoration. If you do the iron heads right, bronze guides, hardened seats, porting..... you'll have as much, or more, as the Edelbrocks. It sounds like supply is in issue right now with Edelbrock, so obviously that's a concern.

Thanks for all the info guys I really appreciate it. I found a machine shop that will rebuild the heads with chevy valves and bronze guides for $700.00.

There are threads on here about a revised torque sequence to prevent cracking of the bottom corners on heads. It seems that the 291 is susceptible. Basically, torque the bottom corners last during install. It may be worth having the heads magged before any $$ are put into the rebuild as well.

Well I guess I got a deal at 550. To get to level of Eddy’s, with 291-c heads you will need a head porter with knowledge of AMC heads.

291c heads are great heads when prepped and handled correctly and when a better grade of fuel is used. They will do 450 hp with an expert port and polish and 400 easily, and for a lot less money. The Edelbrock heads reduce weight and give a lot of show off potential. In stock form the Edelbrocks flow somewhat more than 291c heads but not dramatically. Do your research, there's lots of information about it on this forum. The latest things I've read is that the Edelbrocks need additional work right out of the box regardless of the advertising. Check the heads over for manufacturing mistakes.
