I have not been to the Netherlands, but a friend has, and you don't have long straight runs of road so will be doing a lot of shifting. The B@B will be very tiring on those long curvy runs with a lot of up and down shifting.
IMO LUK and RAM are both good clutches, RAM being overpriced. I've had no issues with ATC clutches either, but others have.

Is there any difference space between the fingers and trow out bearing  from the B&B and the diaphragm ? , I have not plenty of room between the transaxle housing and clutch.
a little the same problem as on a DeTomaso Pantera, thos also will not fitt any Ford Mustang clutch kit.
I have a hydraulic clutch cylinder outside the transaxle

B&B typically sit higher from the flywheel then a diaphragm clutch, typically 1/8" to 1/4".
A double clutch diaphragm is likely higher.
Zoom clutches are getting good reviews by some of the rock crawling crowd for holding power.
Ram gets good reviews, but their price does not always reflect the product.
Interestingly Mcleod seems to offer AMC clutches again, but it looks like you have to buy the pieces individually. These were always my go to for a clutch:
As for the least depth from the flywheel to finger, none of these provide that specification and your likely going to have to spend a lot of time on the phone unless one of the few other people with an AMX3 can provide some guidance.
