New to AMC restoration. I am curious if AC parts like the compressor, condenser, and similar parts are still available. Thanks

Depends on year, but rebuilt or aftermarket compressors are available; OEM condensers are hard to find, but again,, there are aftermarket ones that will work. Things like evaporator or controls will have to be found used.

If you are not pursuing all stock, aftermarket systems perform well. New parallel flow condensers are more efficient for R134A, and new Sanden type compressors use less power and have less vibration than original York type compressors. For the parts inside the car, either original or new work. I have a couple of original inside units if you go that route. On conversions I have done, I used original York compressor mounts with adapter plates to new compressors.
