It's not a stroker 258, but rather a stroker 4.0L. You get the block and you stick the 258 crank in it. If you're fancy you get custom pistons and use 4.0 rods if you're not so fancy you use 258 rods.

Comes out to about 28X CID.

A lot of people would stick the 4.0L EFI on as well, but you can mod the carb intake to work with the 4.0L head. I'd want a bigger carb at 28X CID though. You also want the 4.0 Exhaust manifold, although mods have to be done to make it fit since it comes out where the block diff mount does. Also, don't be afraid of more cam than stock. I will say that if you choose between the stock cams of the Eagle or the core 4.0L I'd go with the 4.0L cam. More lift and a narrower LSA. The 96+ one is arguably the best, but be mindful they made changes to the blocks where the engine mounts are about 00-01ish from what I remember.

There's also the Jeepstrokers.com web site. Doesn't see a ton of traffic but the info's really good.
