I wouldn't worry about leaving it for the day, drop off in the morning and pick up that afternoon, but only leave it overnight at a trusted mechanic's shop. Buy your own pre-made bends and weld it up yourself. If you are decent with a wire welder...

Many shops here won't let the customer in the bays, some have the big bay windows.
Not ego's but insurance. Customers are not covered by their insurance policies if injured in the work area - just like construction areas. Every person in the shop would have to stop and secure what they are doing to let a customer in to have a look at something. $$$
Some shops just take the risk for "customer service".
Take the work to a small shop or find a hobbyist that does good work.
Don't balk at the shops that have large overhead costs vs marginal profit margins.
Ask anyone on the Forum if their personal payed hours into their hobby and purchase costs = the appraised value. Few can make it!

If I don't trust the shop enough to walk away and go elsewhere, or go sit in the waiting area, then I won't leave the car. I have to be at least a little trusting - otherwise why the heck would I even let anyone touch it at all?
Exhaust is one thing I'm not fully equipped for - if it was stock or standard, no problem, but custom pipes, etc. is best done by those who are fully setup to do so. 
I did create the custom head-pipe for my Eagle - but then I had little choice as the engine was out and the pipe had to be made before the engine was put back in.
I just had my 73 aligned - I talked with a couple of the mechanics for a couple of minutes, and have been there before so I knew the parts guys and a little about them. 
It helped that one mechanic knew Javelins, his mother has a 71 and he put a 401 in it years ago..... ah so you guys are at least aware and appreciate the cars.
Small shops have to have the same rules as large if they wish to keep their insurance policies....... I worked in a small independent...... customers were not allowed to hang around and watch or loiter in the shop. 
If you've seen the results of hoist and other accidents, you'd know there's good reason.
Then there's the possibility of damage to a customer car - someone walking by and scratching it, whatever. We were responsible for the car in every way, as well as the people even walking on the property.
I have a huge umbrella policy myself-  just in case.

pretty much said it here. And the mechanic should also test drive the car since that's part of the job. If you wont let him test drive it, I'd tell you to take a hike. No mechanic needs a untrusting customer and most of the time the customer doesn't know what he is talking about

My friend runs a set of headers from a well known company to this site...they also made his exhaust system...V8  Y pipe single exhaust 1 muffler (Full lenth)exits under the rear quarter...There is a difference of less than 5hp with the exhaust and open headers on a car that runs mid 9`s NA....There is something to be said about a well thought out system and the power that can be made....I think 2 into 1 for the six is the way to go

here in LA (in Burbank) is Morse Mufflers. Yenko chevies, a race vette up on the lift getting a stainless system, rods and customs, as well as commercial trucks and grocery-getters, plus recommendations from machinists. they did a GREAT one time drop off/pick up next day job. not cheap, but zero vibration/klunks, work even looks great. and they can help with sizing.

dunno where you are, find a quality shop that does the odd stuff, maybe you'll be lucky to have one in driving distance. not everyone does i guess.

Might be hard to find someone like Morse Mufflers in North Charleston, SC, but someone does race cars in the Charleston/N. Charleston area!!

I tend to agree with the single exhaust for a six. 3-2-1 seems to work well on them (three pipes into a y - 2- and from there to 1 pipe). If you want the look of duals, consider a one in/two out muffler.  If this is a street car I'd stay away from the chamber style mufflers and get an OEM or turbo type. The one on my 2003 Toyota Tundra work truck is a GM OEM muffler, but I don't know the in/out sizes without crawling under the truck. It has a nice sound from the 4.7L V-8. It had a Magnaflow one in/two out on it, one reason I got a great deal on it -- no one liked the LOUD sound!! Couldn't hear yourself think going down the road, but did have a r"race car" sound to it. I took the Magnaflow out from under my wagon too. Not as loud as the Toyota, but it was loud enough you could have a conversation or listen to the radio, but loud as I am I couldn't talk over both the car and radio (loud enough to actually hear without knowing the song playing well)!!  A generic turbo (2.25") went in and it has a nice sound AND quiet enough... though never will be modern car quiet.

Can anyone recommend a one in / two out muffler that fits in a 66 American convertible?

I have a GM truck muffler in my Toyota Tundra that is one in two out. Don't know the original application though. Exhaust shop said it was an OEM replacement. They replaced the FlowMaster that was under it -- and way too loud.
