How do I replace my carb mounting bolts?

This Demon carb is going to be the death of me... the fuel line wants to kick the coil out of its spot, AND it wants a spacer to give it a better view...

Long story short, I need to use a 1" spacer to get the inlet to clear the intake, so I need new bolts. How do I remove them?

May I assume you are referring to the threaded studs that are in the intake - they are too short for the spacer AND carb?
If so, I either use a stud remover (doesn't really keep them nice)
OR, run two nuts down onto the studs. Tighten them against each other really snug.
Use a wrench on the lower one and try to unscrew it like a bolt. It will turn up and work against the upper one and act like a bolt and come out.
It helps to run them against each other as tight as you can without stripping or breaking the studs. You then remove the nuts.

Yes. I do similar in reverse if I want them in snugly - run two nuts on the new ones, jam them against each other, then use the top one to screw in the studs, then remove the nuts.
Good time to be sure the threads in the intake are ok - if it's a used one, sometimes they are stripped or worn or bad. If a new intake or it's in good shape, they should be fine.
If it's used or they are in bad shape, Helicoil will fix 'em right up.
But if the studs are snug, not loose and you can't just work them out with your fingers, they are probably fine.

Ok, here's a new question: How do I get the bottom nut off of the stud after it's removed?

The stud should have a spot in the middle where there are no threads, clamp it in the vise and run the nut off with a wrench.

Sounds like you went too far and bottomed it to the end of the thread.
vice grips on the unthreaded part of the stud then the wrench to turn back the nut..

I must not have a very good vice, even if I tighten it up well I can't turn the nut without the stud turning. Guess I'll tighten the stud up again and try to take the nut off that way and not tighten it down so much when I take it back out.

I've got a pair of narrow jaw vice-grip and have often had to do just that. The stud goes back into the rounded part where there's some teeth, and it's narrow enough it puts a lot of pressure on that blank part of the stud and doesn't mess with the threads.
 
Yeah, pmm is probably right, I guess I didn't warn about putting the bottom nut down so far - sorry.
