Would 205/70 14 Tires fit a '68 Rebel OK without any rubbing problems?  I'm a bit of a dunce when it comes to tire sizes (along with a lot of other stuff). I've been given a few available options but want to go with a tire that will look the best on the car.

If the wheels are stock steel 14", then I believe yes, they would.  I believe that 205 tires are equivalent, size-wise, to the old "E" series.  See http://www.tirerack.com/tires/tiretech/45_conversionchart.html

Yes, a 205 will fit just fine. I'm running 215s, and those should run fine on your car (my 63 Classic may have a bit smaller wheel well than the 68). 225s might fit, but that's getting a bit close in my car.If 205s or 215s work for you they are fine. You might want to check the diameter compared to stock tires. A 70 series might be a bit shorter, but if the tire is a bit wider then it may be just right. I don't recall stock tire size.

Check the owners manual or TSM for original tire size. Here is a chart showing equivalents:

An E-14 is equivalent to a 205/14. Should be about right, but a bit wider tire won't hurt, and won't throw the speedo off more than a couple mph. AMC didn't change the speedo gear for one tire size up/down.

I put Hankook 215 14's on my 67 Ambassador with stock everything. It should be pretty much the same as your Rebel. BTW, I got pretty reasonably priced whitewalls from, of all places, Amazon. I've had them now for a year and put a lot of miles on them. They've been quite satisfactory.

What aspect ratio are those tires?

I recently bought Michelin Defender 205/70r14 for my AMX for $92 each.  They're very close in dimensions to the original tire and are exceptionally smooth riding.  I have them on my Opel GT as well.
