The major project I am planning on the 1968 AMX 390 this winter is the Clutch Replacement. So when I am doing this what else should I consider doing at the same time?
Things I am thinking of replacing or working on are:
1) Pull and resurface flywheel
2) Universal joints on Drive Shaft (replace)
3) New Stock Pressure Plate and Clutch
4) New throw out Bearing (what brand is best?)
5) Replace Clutch fork
6) New bolts (capscrews) for pressure plate
7) New Pilot Bearing
8) New Return Spring
Is there anything else I should attend to or perhaps consider replacing? I want to have the parts on hand once I get into this job.
Always up for some good advice.

You don't really have to replace the clutch fork unless it is badly worn. I would replace all of the clutch linkage bellcrank bushings, the linkage clips and inspect the bellcrank pivot balls. Replace the pivots if they are worn. I believe that all of the parts are available through the big vendors.

How ya doin' 12Gauge ? Seems we haven'T heard from ya in a while.
New Clutch huh ? Did ya wear it out doin' burnouts in that choice AMX ?
Maybe a new Trans mount while your at.
May be U Joints available without zerk grease fittings, they're stronger.
May want to have driveshaft balance checked while it's out.
TSM says to mark U Joints / yokes and re-install in same orientation.
Maybe new Flywheel to crankshaft bolts, they're torqued to 100-110 lb/ft.
Believe you've already replaced the tranny lube if memory serves.

Phatty & 71SC360: I have been quietly reading here at least every other day. Putting the car up for winter's arrival. Just took alot of things (paints, fluids) etc. in the garage back indoors where it is heated to protect them from freezing. Thanks for the advice.
