I dont know of any thats been done except the one in canada,  and it is an extremely difficult swap, and most people dont attempt it for that reason.  one of my parts cars was an SX-4 that someone attempted to put a V8 into, well, its now a parts car.  get the point?   but you are welcome to try it.  I never have attempted it, and I sure dont recommend it either.

There's a GREAT write-up somewhere on the web where he shows the whole process.
Remember, the engine sits to the right on the Eagle, so you have to account for the V8 to be shifted to the passenger side AND the extra weight (although not much extra weight - the loaded 258 is only about 50 or so pounds lighter than an AMC 8)

That's one of the most beautiful Eagles I've seen.
Whoever did that Eagle is welcome to come and do the interior on mine! Let's make a deal........

There's a guy on the Eagle Nest that makes a kit to install a V8 in an Eagle. You can also save yourself all the trouble and buy this bad Eagle with a 390.

A guy in Detroit did it years ago and his looked factory. One of the issues if I remember right was mounting the front differential. The 6 cyl has a stiffening bracket that attaches the diff to the block. He had to fab something up to the V8.

The differential hangs from the motor mount brackets. There's a bracket that goes from the block down to the pinion area to keep the differential from "twisting" from torque. It's the only one of the three that bolt directly to the block, unless you count the ones that bolt on with the motor mount brackets.

On the driver side, the bolt go down into the top of the differential:

Here is how it hangs on the right side:
