refer to my previous post about the pressure gauge.
fluctuating readings could be the gauge.

Bouncing is normal.
You are seeing the pulsing of the gear oil pump!
Aftermarket gauges are not usually buffered
to eliminate rapid movement.

It should smooth out as speed increases.

 The very first step in diagnosing what you've described is to cut open the oil filter to check for medal debris. Empty the contents in a pan and go over the filter pleats and contents in the pan with a magnet. Then inspect the oil in the pan out in the sunlight for fine sparkling medal particles that aren't magnetic.
