Any help figuring out the correct copper or crush washer(s) needed
to seal the metal fitting/rubber hose to caliper.  I think the copper
washers are either incorrect or were crushed too many times.

One side had two washers, the other, one.  What is correct?

Should be two.  One on either side of the banjo fitting.

there appears to be only one place to place the washers:
on the end of the fitting that screws into the caliper (red circle).

The banjo style hose/bolt is newer, so yes, one copper washer.
Look for a nick around the hole in the caliper. I've seen rebuilt ones have a little damage around the hole that the copper washer cannot take care of.

had a brake hose front on the left side leaking and took out the flat washer and replaced it with one from blasers. it is flat on one side and round on the other so it will crush when tightened down.

OK, so I've been there and done that.  Mopar used the same caliper as AMC did in 1971 to 1974, on the E body Mopar Cuda/Challenger and most of the rebuilds are for the Mopars, IE the bigger market. Mopars use a banjo fitting hose with two thin copper washers for the breaks  on each side of a hollow bolt to the caliper. AMC never used the banjo type fittings on any of there cars, always a straight brake hose into the caliper with a thick copper washer. Most of the copper brake washer you get today are also metric not the (old) AMC SAE type. So, you need the thick SAE type washer and the ONLY PLACE I FOUND the right copper washer was NAPA.  Like I said drove me nuts trying to figure out why the brakes were leaking . And yes on my 69 AMX because I retro fitted them for a latter model AMC. LRDaum

Thanks, Larry.  Got a NAPA # for that washer?

Those copper washers are really gaskets, so they're one-time-use. I have of course re-used them myself... but they're cheap, I have learned to keep a bag of them laying around.

I went to Carquest and they pulled out a compartmented box full. We matched them up. Since then I bought my own assortment box. I have used them for oil drain plug gaskets, too.

Thanks, Tom.  I hit up three different places today, looking for the correct ID, but tough
to find.  I should've just contacted my race car buddy up the street--he has hundreds of
these things.  He even annealed the washers for me--what a guy! Search done!
