Are you holding the throttle 1/4-1/2 way open and holding it there while operating the starter? It should start within 5 seconds.

That's the factory-approved method of hot starting and it's the method that all my carbureted cars, AMC or not, require for hot start.

After the head was re-installed, was the choke heater hooked up? The hard start symptoms sound like a choke that is not opening.

A high temperature gauge reading and boiling coolant or steam out the radiator is often a symptom of a cooling system that is low on coolant or forming steam pockets due to a radiator cap failing to hold sufficient pressure.

If the rubber seal in the rad cap is deteriorated it will do that.

I'd also pull the water pump to have a look. I had a plastic impeller let go resulting in overheating.
